Inspector’s notes
Observed eggs to be stored on tables with an insulation blanket serving as the only form of temperature control. Per Person-in-Charge, food product is received between 9 and 10 am and the food shelf ends at 7 pm. It was discussed with Person-in-Charge that TCS foods must be held under mechanical refrigeration. Make sure all TCS (Temperature Control for Safety) foods are held under mechanical refrigeration.
