Have an approved quaternary ammonium sanitizing solution: • Within the concentration specified in 21CFR.178.1010, and • According to the manufacturer/'s directions

Inspector’s notes

The 3-compartment sink initially had a sanitizer solution of only 100ppm quaternary ammonium. Sink was emptied and refreshed to 200ppm quaternary ammonium. Ensure staff refresh solution as needed to maintain 200-400ppm.

In plain English

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
