Observed hot water dish machine not reaching the required plate temperature of 160 degrees F. (only reaching 158.1) Discussed with operator. Can still use dish machine to wash dishes, however they will need a final sanitizing soak step in the 3 comp sink until unit can be serviced.

These items were received from caterer at 138 degrees F, and will be served or discarded within 4 hours of receipt. Operator to turn up hot hold unit to keep TCS foods at or above 135 at all times, or submit paperwork for Time as a Public Health Control (TPHC)
