Observed Styrofoam to-go containers being used on-site. Per the City of Minneapolis Green To Go Ordinance, Styrofoam to-go containers are not allowed to be used. Discontinue using Styrofoam to-go containers and use containers that are either reusable, recyclable, or compostable.

Observed cotija cheese on the prep table holding at 72F. Per discussion with the Person In Charge, the cheese is being used as a working portion. The quantity of cheese left at room temperature was too large to be considered a working portion. Other practices were discussed during the inspection, including reducing the amount of food kept out as a working portion or implementing Time as a Public Health Control.
