Inspector’s notes

Chicken and Rice delivered from the caterer was observed cooling stacked in the Reach In Cooler with the lids tightly covering the products and the pans stacked on top of each other at the time of inspection. Discussed with Kitchen Supervisor that foods cool fastest when the lids are off of the products and they are spread out to cool. Kitchen Supervisor removed container lids and unstacked them so that the food in the containers could cool in a single layer. Cool foods uncovered, unstacked and spread out.

Inspector’s notes

Quat sanitizer dispenser used for 3 basin sink was measured at 0PPM at the time of inspection. Staff member was doing dishes at that time. Discussed with Person In Charge to drain the sink and refill it. Sink still measured 0PPM quat. Told Person In Charge that quat dispenser would need to be serviced and that the sanitizer tablets could be used to do dishes until sanitizer dispenser is serviced. Once sink dispenser is serviced and is measured within the range specified on the sanitizer label, dishes can be done using the dispenser. Worked with Person In Charge to mix the sink to 200PPM quat according to the sanitizer tablet label. Maintain quat sanitizers according to their label at all times to effectively and safely sanitize dishes.
