Inspector’s notes

Milk (52F), Shell Eggs (49F), Yoghurt (47F) and Mayonnaise (48F) were observed improperly cold holding in the Front Reach In Cooler above 41F. Discussed with person in charge, who stated that foods were delivered 2 hours earlier by 2 suppliers' refrigerated trucks and they did not take temperatures of the food when they received it. The cooler was measuring 49-52F at the time of inspection and was not returning to cold holding temperatures. Internal cooler thermometer was observed at 50F. Ordered facility to see if they can cool products by moving to a different cooler that was holding at 41F or below. If the foods did not cool to 41F or below within 2 hours from that time, they would need to discard the foods. Director requested service for the cooler during inspection. All cold food that required refrigeration was moved to another unit to keep cold until cooler could be repaired. Maintain all cold TCS foods at 41F or below at all times.

The cooler was measuring 49-52F at the time of inspection and was not returning to cold holding temperatures. Internal cooler thermometer was observed at 50F. Director requested service for the cooler during inspection. All cold food that required refrigeration was moved to another unit to keep cold until cooler could be repaired. Repair or replace unit.
