Inspector’s notes
All foods in the salad prep cooler were found to be above 41F. Examples include blue cheese dressing at 60F and chickpeas at 61F. Upon inspection the outlet for the cooler had tripped and there was no power to the cooler. This was likely caused by water hitting the outlet when mopping the floors the previous evening. All TCS foods were discarded. Discussed ways to hold foods for salad preparations until the cooler has reached 41F or below. Tomato sauce for pizza is held at room temperature. Keep tomato sauce at 41F or below. Guidance on time as control, working supply and lab testing provided with report.

Inspector’s notes
The ware washing thermometer used to measure the utensil surface temperature needs to be repaired or replaced. The dishwasher was run three time with a disposable temperature indicator for 160F, inspectors waterproof thermometer and the restaurants thermometer. The restaurant thermometer temperature was approximately ten degrees lower than the disposable temperature indicator and the inspectors thermometer.

Observed #7 compostable plastic lids used for the artichoke dip containers. There are no compost waste bins on site. You must have compost waste bins on site when compostable plastics are used. Discontinue using compostable plastics or provide compost waste bins.
