Inspector’s notes

Observed raw fish in a hotel pan submerged in standing water, thawing at room temperature. Observed raw ribs thawing at room temperature in the original packaging. The Person In Charge (PIC) was instructed to discontinue thawing food at room temperature and to use an approved thawing method. The ribs were relocated to refrigeration for prope thawing.
