Observed dish machine tested at 0ppm chlorine. Ensure dishes are sanitized after cleaning to prevent . PIC set up the three compartment sink for sanitizing at 400PPM quat.

Observed dish machine was not maintaining the proper amount of chlorine to sanitize food contact surfaces, tested at 0ppm. PIC changed the sanitizer bottle and primed the machine at time of inspection and retested at 0ppm. Ensure all equipment is maintained in good repair and proper adjustment.
Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.
