majorCode MN Rule 4626.0705BFood temperature

Official wording

Have a thin-tipped food thermometer easily available to measure the internal temperature of thin pieces of food.

Inspector’s notes

There was no thin-tipped food thermometer available at the time of inspection. Facility occasionally works with raw chicken and beef burgers, so a thin tip thermometer is needed to measure the temperature of thin meats to ensure that they are fully cooked. Provide a thin tipped thermometer and maintain on site at all times.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
