REPEAT 6-501.111 Controlling Pests The PREMISES shall be maintained free of insects; rodents; and other pests. The presence of insects; rodents; and other pests shall be controlled to eliminate their presence on the PREMISES by: (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; -Observation: flies in back of meat market by loading dock. There is currently no fly control for this area. Provide fly fan or other appropriate measures to keep flies out of premise. Keep the premises free of insects; rodents; and other pests. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).

(A) EQUIPMENT that is fixed because it is not EASILY MOVABLE shall be installed so that it is: (3) SEALED to adjoining EQUIPMENT or walls; if the EQUIPMENT is exposed to spillage or seepage. -Observation: 3 comp sink had caulk missing. Make sure to caulk sink on the wall. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 4-501.11 Good Repair and Proper Adjustment-Equipment A) EQUIPMENT shall be maintained in a state of repair and condition. -Observation: meat band saw had top plastic cover broken and plastic can fall on the food and become a solid hazard. Make sure to keep equipment in good repair. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 4-501.12 Cutting blocks and boards subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized shall be discarded. -Observation: meat market main cutting board had deep cuts and black buildup. Make sure to clean as often as necessary to keep it clean. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 4-502.11 Utensils shall be maintained in good repair. -Observation: knifes and other utensils had handle in bad repair; with tape on it and it can no longer be considered cleanable. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).
