3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Milk in the milk box were maintained above 41F (44-46F). Temperature controlled for safety foods shall be maintained at 41F or less. CDI: Milk was relocated to walk-in cooler to cool to 41F. Ambient of milk box was 44F during inspection. PIC stated she will place a work order for this unit. REHS explained that the milk for service can be placed on ice for short periods during service; but must be removed immediately after service to walk-in cooler.

Food shall be protected from contamination by storing food in a clean; dry location where it is not exposed to splash; dust; dirt; or other contamination and at least 6 inches above the floor. CDI: One box of yoghurt was voluntarily discarded due to water seeping into product. All food was relocated from affected areas to vacant areas within cooler.
