2-102.12 (A) Certified Food Protection Manager; Core; Manager onsite does not have certification for food protection manager. The person in charge shall be a certified food protection manager who has shown proficiency of required information through passing an ANSI approved course. When food is being prepared and sold a certified manager must be onsite. Reviewed approved certifications and upcoming classes with employee during inspection.
