4-501.114 (C)(1); Priority; Quaternary ammonium sanitizer in the three compartment sink measured 63F. A quaternary ammonium compound solution shall have a minimum temperature of 75F. CDI- Quat remade with warm water. No point taken.

The inside compartments of ice machines shall be cleaned at a frequency necessary to preclude accumulation of soil or microbial residues. Clean this panel.

3-501.18; Priority; One container of mozzarella cheese observed in walk in cooler with a prep date of 9/6; which exceeds the 7 day shelf life. Food shall be discarded once the 7 day shelf life has been met. Corrected During Inspection - PIC voluntarily discarded this item.

Corrected During Inspection - Upon discovery; PIC notified inspector that this was actually soapy water rather than sanitizer. Inspector discussed with PIC ensuring buckets are properly labeled to identify contents of the container so it is not confused with sanitizing solution.
