5-205.15 (B) Leak pipe etc. not imminent threat 5-304.12 Using a Pump and Hoses; Backflow Prevention (C) Handwashing sinks #2; #3; and #4 run brown water for approximately 30secs. Water then clears and intermittently turns from light brown to clear during the handwashing process. The PIC has stated that they put in a work order for the sinks; but the issue is caused by the hot water heater. Maintain plumbing in good repair. A PERSON shall operate a water tank; pump; and hoses so that backflow and other contamination of the water supply are prevented. Hot water heater and associated components must not contaminate water supply. Repair or replacement is needed.

3-501.16 (A)(2) and (B); Priority; Fried chicken salads on the serving line and in the reach-in cooler were observed too warm (see chart). Portioned cups of salsa in the reach-in cooler were also too warm. TCS foods shall be maintained cold at 41F or below. CDI- salads and salsa were brought to the freezer to flash cool. Consider keeping these foods on time in lieu of temperature control. Provided TPHC document during inspection and explained its use.
