3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Ham = 53 degrees F; pulled pork = 66; ham and roast beef = 50; brisket = 48; macaroni and cheese = 49. Cold foods should be held to 41 degrees F or below. All foods were moved to the walk-in freezer for cooling since they were prepared 4 hours prior. Foods had reached 41 degrees or less by end of the inspection.

4-501.11 Good Repair and Proper Adjustment - Equipment (C) Refrigeration must be maintained in good repair. Foods in deli refrigeration unit ranged from 44-66 degrees F. Refrigeration must maintain food temperatures to 41 degrees F minimum. CDI- Spoke with Madison; District Manager; who stated a new unit has been ordered. She is emailing specs and will have a repairman look at the existing unit if the new one will not be delivered within a week. The store manager is using ice baths to keep temperatures maintained and alternate refrigeration in the mean time.
