Further discussion determine that rice was cooked and transferred to MFU prep cooler roughly an 1.5 hours prior to inspection. Discussed blast chilling rice using the walk in freezer or walk in cooler at commissary prior to transferring to cooler unit on food truck. CDI- item discarded.
