Certified Food Protection Manager
2-102.12 (A); Core; No certified food protection manager was present during the inspection. The person in charge shall be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program. CDI - Present manager has ServSafe CFPM class scheduled on 3/12/2025.
A required permit, food safety certificate, trained manager, or posted sign was missing or not current. These show the business is following the rules and has trained staff.

3-501.19 (B)(4)(5); Priority; The half and half pitcher under time control had passed its four hour hold time; the pitcher was left out longer than it's marked discard time of 12:40pm. Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. The food shall be discarded after the food has completed its 4 hour hold time; if the food is in unmarked containers; or marked with a time that exceeds the 4 hour time limit. CDI - PIC voluntarily discarded half and half. Repeat.

A small-diameter probe food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures as specified in the NC Food Code. 3-501.19; Priority Foundation; The half and half/cream pitcher did not have time labeling while under time control. If time without temperature control is used as the public health control up to a maximum of 4 hours: The food shall be marked or otherwise identified the time that is 4 hours past the point in time when the food is removed from temperature control. CDI - Employee added time label to pitcher. Ensure time control items are labeled when they are initially removed from the cooler.

4-703.11; Priority; When tested during the inspection; the utensil surface temperature in the dishwasher reached a maximum of 116F after several cycles. Ater being cleaned; equipment food-contact surfaces and utensils shall be sanitized in: if using hot water mechanical operations; achieving a utensil surface temperature of 160F at measured by an irreversible registering temperature indicator. Do not use dishwasher for sanitizing; call technician to address issue with machine. Follow-up by 04/01/2024.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
