3-501.18; Priority; Pasta salad in the prep cooler had a prep date of (8/5). This food should have been discarded at the end of day yesterday. A food requiring date marking shall be discarded if it exceeds seven days (except time that it is frozen); is not labeled; or is marked with a date that exceeds seven days. CDI- PIC stated that sometimes when washing dishes; employees will forget to remove old date labels. Continue training employees. Pasta salad was voluntarily discarded today.

3-501.15; Priority Foundation; Rice found cooling at room temperature (100F-111F) on the prep table. Cooling shall be accomplished by using rapid cooling equipment; stirring the food in a container placed in an ice water bath; using containers that facilitate heat transfer; adding ice as an ingredient/using ice wands; placing the food in shallow pans; separating the food into smaller or thinner portions; or using other effective methods. Once TCS food falls below 135F; food must be actively cooling. CDI- Rice was placed in the walk-in cooler; uncovered; to continue the cooling process.

4-602.13; Core; Hood filters are in need of cleaning to remove the thick grease accumulation. PIC stated that the hood filters are professionally cleaned once a month. Non-food contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Increase cleaning frequency to hood filters.
