PIC states that items are reheated in a water bath reheating unit and then placed in the steam wells. Foods that are cooked; cooled; and then reheated must be reheated to at least 165F before being placed in hot holding equipment. CDI-All foods were reheated in microwave to at least 135F. NOTE: This is a repeat violation that was also marked on the last inspection. Recommend a reheating log to ensure proper reheating temperatures are reached. Also recommend fully heating all hot-holding equipment (steam wells; hot drawers; etc) before placing the reheated food into the holding units. If double panning and plastic wrapping are making it difficult to hold foods at required hot-holding temperature (135F); use a single pan instead and remove plastic wrapping.
