3-502.12 Reduced Oxygen Packaging; Criteria (P) Facility is reduce oxygen packaging cooked rotisserie chicken on site. These items were observed inside reach in cooler and reach in freezer with prep dates of 6/30 and 6/18; therefore exceed 48 hours. A food establishment shall obtain a variance before smoking foods; packaging foods using a reduced oxygen packaging method; and sous viding foods. Corrected During Inspection - PIC immediately discarded opened rotisserie chicken inside reach in cooler and is discontinuing product until more can be purchased. PIC is taking all other product home for personal use and will not serve it to customers. PIC will likely move to storing this item in ziplock type bags or other suitable storage that will not eliminate the oxygen inside the product. Processes shall be immediately discontinued until a full written approval is obtained from the department.
