3-501.16(A)(1) Priority: Chicken sandwich is 126F on the steam table. Maintain TCS foods in hot holding at 135F or above. Chicken sandwich was voluntarily discarded by the PIC.

3-501.16(A)(2) Several chief salads were being held at 50F. Maintain TCS foods in cold holding at 41F or less. -P CDI.. The salads were cooled down to 41F.

The shelves were taken up and washed at the three compartment sink.
