In-use wiping cloths used on equipment surfaces shall be held in a chemical sanitizer solution at the proper concentration according to EPA guidelines or manufacturer's instructions (150-400ppm for quaternary ammonium). CDI: Solution was replaced and tested at 200 ppm.

Ensure the person that is left in charge is a certified food protection manager. Owner is in the process of having more employees certified. CDI- RAID can was voluntarily discarded during the inspection.

The BFP on hose bib is not approved for constant water pressure and for a shutoff that is downstream from the BFP. Turn on and shut off the faucet at the wall (knobs) and release the excess water from the hose at the splitter when hose is not in use. CDI- Water was turned off at knobs and splitter was opened to release excess water. Educated PIC of requirement.; 5-202.13; Priority; Spray nozzle hose attachment found on swing spout of prep sink and was forming a direct connection to the sink basin. An air gap between the water supply inlet and the flood level rim of the plumbing fixture; equipment; or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 25 mm (1 inch). CDI- Hose was removed from the sink basin and PIC was educated on requirement. Hose attachment was recently purchased.
