We discussed today having employee write the procedures also in Russian. Describe the temperature the food starts at (41 degrees F or 135F). Explain how you will label it (date sticker on the lid; or tape on the refrigerator back or paper log on the table or wax pencil). Then say what happens at the end of 4 hours: discarded. Manager is developing the time holding procedures.
