3-501.14 Cooling (P) Lamb was 49 degrees F cooling in walk-in cooler at 12:00 noon. Lamb was 50 degrees F (sitting on table near gyro machine) at 12:30pm. Lamb should not be increasing in temperature. Place back in walk-in cooler or refrigerator so it continues to cool down to 41 degrees or less within 4 hours. CDI - Lamb was placed in refrigeration to continue cooling.
