2-103.11 (O) The PIC shall ensure that employees are informed in a verifiable manner of their responsibility to report information about their health and activities as they relate to foodborne illnesses to the PIC. Pf -Observation: food employees were not able to inform their responsibilities to report foodborne illness and Person in Charge (PIC) could not provide documentation. -Corrected During Inspection (CDI): Environmental Health Specialist (EHS) handed printed Health Employee Policy to Person in Charge (PIC) and sent by e-mail as well to discuss with food employees.

REPEAT 4-204.112 A temperature measuring device sensor shall be located in a mechanically refrigerated or hot food storage unit to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. -Observation: several coolers didn’t have ambient air thermometers located in the warmest part. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).
