REPEAT 3-501.15 Cooling Methods (A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under sec. 3-501.14 by using one or more of the following methods based on the type of FOOD being cooled: Pf (1) Placing the FOOD in shallow pans; (3) Using rapid cooling EQUIPMENT; (5) Using containers that facilitate heat transfer; (B) When placed in cooling or cold holding EQUIPMENT; FOOD containers in which FOOD is being cooled shall be: 1) Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; -Observation: after chicken is cooked; establishment placed in food sink to cool down only enough to food employee be able to mix the chicken with mayonnaise and other cool ingredients to prepare chicken salad. After 1h05min chicken mixed with mayo was 80F. At 12h45 it was 114F and at 1h50 it was 80F. Cooling rate was 0.52F/min. Chicken was in deep container and chicken temperature was varying in different parts. Environmental Health Specialist (EHS) recommends to placed chicken in freezer / cooler and cool down to 70F or below first; then work with chicken to make the chicken salad. -Corrected During Inspection (CDI): Person in Charge (PIC) voluntarily placed chicken in freezer to cool down faster. At 2h40pm chicken was 63F.
