2-103.11(I); Priority foundation; Observed air temperature logs over the past three days for the warming cooler at a range of 63F-70F without any records of correction or verification of food temperatures. The person in charge shall ensure that: Employees are properly maintaining the temperatures of TCS foods during hot and cold holding through daily oversight of the employees’ routine monitoring of food temperatures. CDI - Discussed with food employee and manager present better methods to monitor food temperatures. Always verify air temperatures of cooling units by using a then-probe food thermometer to puncture foods to check temperatures.

Manager placed a work order for plumbing maintenance repair.
