4-601.11 (B) and (C); Core; Fan covers in back of reach-in units have dust accumulation. Old food crumbs/debris observed on lip of pastry oven under the door. The nonfood-contact surfaces of equipment shall be kept free of dust; dirt; food residue and debris accumulation. Increase cleaning frequency.
