3-501.15; Priority Foundation; Cut melon was found being cooled in the reach-in cooler in a container with a tightly fitted lid. Potentially hazardous food shall be cooled in containers with loose/no covering to facilitate cool air flow. CDI- Lid was removed during the inspection.
