Several different factors (booster heater inconsistently working; large water leak and pressure gauge not functioning) could be the issue. Maintain hot water sanitizer at 160F. Temporary solution- dishes may be ran through the dish machine and then dipped in sanitizer at the 3-compartment sink. Verification Required- EC will return on Tuesday; 6/9/26 to verify that the dish machine issues have been addressed.
