CDI- Provided a digital copy of Employee Health acknowledgement form and a physical poster with symptoms and illnesses.

3-501.15; Priority Foundation; Metal pans of fried chicken and mac and cheese bites left at room temperature to cool observed with an internal temperature around 88F. Must use rapid cooling equipment (refrigeration/ice) when temperature falls below 135F. Remember that hot foods must cool rapidly from 135 degrees F to 70 degrees F within 2 hours and from 70 degrees F to 41 degrees F or less within 4 additional hours. Use calibrated metal stemmed food thermometer to ensure proper cool down. Once foods have cooled to 41 degrees F or less; they may be tightly covered. CDI- Food taken to refrigeration cooler to cool rapidly.

When asked; PIC stated that the apples are washed at the commissary prior to bringing on MFU. Apples are cut on MFU and used in a salad. Except for whole; raw fruits and vegetables that are intended for washing by the consumer before consumption; raw fruits and vegetables shall be thoroughly washed in water to remove soil; stickers and other contaminants before being cut; combined with other ingredients; cooked; served; or offered for human consumption in ready-to-eat form. Ensure stickers are removed during the washing process.

3-501.16(A)(2); Priority; Roasted red pepper sauce on ice was holding between 46-47F. Pork belly and marinated chicken were holding between 43-45F in the cooler drawers beneath the grill. Feta cheese and sliced tomatoes were observed being stored in a quart container stacked inside of another container and holding between 44-45F. Maintain TCS foods in cold holding at 41F or less. CDI- all food items had been stored on the truck for less than 4 hours so all items were rearranged to maximize cold air flow or ice was added. Please keep in mind that during the summer where extreme heat outside is evident; your coolers will be likely working overtime to maintain temperatures. Please try to keep windows closed when not serving a customer to help keep the truck cool.
