3-501.15; Sausage burritos made this morning around 6am were observed tightly wrapped and in a covered container in the tall glass door reach-in cooler holding above 41F; three and a half hours after preparation. Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI- PIC opted to voluntarily discard the burritos. .
