4-903.11 (A); (B); and (D); Core; Equipment; Utensils; Linens and Single-Service and Single-Use Articles Storing; Several clean containers used for holding hot food on the make line stored on clean dish rack next to three compartment sink wet nested. Cleaned equipment shall be stored in a self-draining position that allows for air drying. Dishes moved during inspection.

3-304.12; Core; Two cups of water at the coffee bar are used to store soiled long-handled spoons for stirring coffee beverages for re-use. Cups of water are labeled for four hours. Coffee stirring spoons shall be stored dry; not in water. Water cups were removed and replaced with dry cups today.
