3-501.16 (A)(2) and (B); Priority; [Repeat] A container of tomato sauce and wing sauce (containing garlic and oil) were observed sitting on the countertop and holding between 44-49F. The PIC stated that the items were recently put out within the last 30 minutes. TCS foods shall maintain a cold hold temp of 41F or less. CDI: Items were allowed to cool down under refrigeration.

3-501.18; Priority; [Repeat] Containers of pork belly and chicken wings were observed without dates in the walk-in cooler. A container of spicy tomato sauce dated 8/28 was also observed in the walk-in cooler. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- known dates still within 7 days added to pork and chicken. Tomato sauce was voluntarily discarded by PIC.
