4-601.11(A); Priority foundation; Observed a couple knives and a vegetable peeler with food residue on their surfaces while stored on a magnetic strip. Equipment food contact surfaces and utensils shall be clean to sight and touch. CDI - Utensils separated for thorough cleaning. Repeat.

3-501.19(B)(3); Priority foundation; Observed a food employee writing and adding time labels to TPHC foods after time holding had begun 30 minutes prior to able being added. Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. CDI - Discussed proper time holding procedures; time labels should be added as soon as food is removed from cold holding.

3-302.12; Core; Observed a couple containers of salt; sugar; and MSG without labels at the wok station. Working containers of food or food ingredients removed from their original packages for use such as cooking oils; spices; salts; flour; and sugar shall be identified with the common name of the food; except containers holding food that can be readily and unmistakably recognized such as dry pasta. Add labels to food containers.
