4-501.114 Mechanical Warewashing Equipment; Chemical Sanitization - Concentration (P) Dish Machine is not sanitizing. There is no residual chlorine. After being run several times and primed several times there is approximately 10ppm residual. Use test strips daily in the dish machine. Manager contacted the Ecolab rep and he is on his way to the restaurant.

Refrigerator with drawers is also not clean. Wall mounted knife holder is not clean. Tea Nozzles need to be taken apart for cleaning (and replace components when they can no longer be effectively cleaned). Cleaning is needed behind the soda machine in the drive-thru. Maintain equipment clean.
