3-501.16 (A)(2) and (B); Priority; All sliced cheese recently placed in prep cooler observed with an internal temperature between 53F-55F. Ambient air of unit was holding above 50F; according to the ambient thermometer in unit. PIC stated that this unit was recently serviced within the last week or two and was fixed. TCS food shall be cold held at 41F or below. CDI- Facility was allowed to rapidly cool food down in reach-in cooler. Refrigeration technician was called for an emergency visit during the inspection. PIC agreed not to use this unit until unit can be serviced again and is capable of holding food at 41F or below.
