A chemical sanitizer used in a sanitizing solution for a manual/mechanical operation shall be used in accordance with the EPA-registered label use instructions and shall be used as follows: A quaternary ammonium compound solution shall have a concentration of at least 150ppm not to exceed 400ppm. CDI - Sanitizing compartment drained then refilled with sanitizer of adequate concentrations. REHS recommends filling the sanitizer compartment when employees are actively washing dishes and not to leave it filed for an extended period of time.
