Another food handler picking through salad mixture; with coat sleeves being dragged through the product. Food employees may not contact exposed; ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue; spatulas; tongs; SINGLE-USE gloves; or dispensing equipment. CDI- Actions stopped and PIC educated. PIC directed employee to wash hands/arms at handwashing sink; and start using long spoon for stirring mixtures. Salad handlers educated by PIC.
