Observation: The hand sink at the wait station is being used to dump drinks - Ice observed in basin of sink; CDI: Sink was cleaned out as a corrective action and discussed with PIC placing a dirty dish tub at wait station for dumping drinks as hand sink is only allocated for handwashing. 5-205.11 Using a Handwashing Sink - Operation and Maintenance (Pf) (B) A handwashing sink may not be used for purposes other than handwashing Pf.

Observation: When measured the surface temperature was unable to reach 160F during the final rinse cycle. Wash temperature observed at 145F. CDI: Dishes and equipment were being washed in dishwasher but transferred to 3 compartment sink for manual sanitizing as a corrective action. Follow up for repair of dish machine by 7/18/26. 4-703.11 Hot Water and Chemical. After being cleaned; EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be SANITIZED (B) After being cleaned in a mechanical dish machine; equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of 160F as measured by a max/min thermometer.-P.
