4-703.11 Blender components and items shielded from allergens are not being sanitized. Typically wares go through the dish machine; but blenders and allergen-sensitive items are excluded from the dish machine. Employees are unaware of how to use and differentiate the detergent and sanitizer in the ware washing sink. After cleaning; equipment; food contact surfaces; and utensils shall be sanitized using an approved method.-P We talked extensively today about how to assure items cleaned exclusively in the ware washing sink shall be sanitized. Additional sink labeling was added today. Employee training is needed to assure all wares and utensils are sanitized; whether inside the dish machine with chlorine or in the ware washing sink with ammonium chloride sanitizer from the dispenser that is not in the proper order to coordinate with signage. 4-602.11 Equipment Food-Contact Surfaces and Utensils - Frequency (P) Glass Top Refrigerator Lid is not clean including the gasket. True Refrigerator lid is also not clean. Extensive; regular cleaning of the open-top / make-line refrigerator lids is needed. These refrigerator components acts as the covers for the food contained in these refrigerators. Maintain lids clean. discussed for correction today.
