Verification required. 4-703.11(B); Priority; Dish plate surface only reached 148 - 150F after running several times. After being cleaned in a mechanical dish machine; equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of at least 160F as measured by a max/min thermometer. CDI- all equipment recently washed was placed in the Quat sanitizer at three comp sink. No quat was being used prior to inspection; only the machine.
