Ware washing machines and the compartments/drainboards of sinks used for washing and rinsing equipment; utensils; raw food; etc. shall be cleaned before use; throughout the day to prevent recontamination of equipment and utensils; and at least every 24 hours if used. CDI Sink was cleaned.

4-302.13 (B); Priority Foundation; The facility does not have a maximum register thermometer for the high temp dish machine. Provide an approved Max/Min thermometer for testing sanitizing temperatures in hot water warewashing machines. The thermometer must be readily accessible. A Google search showing what type of thermometer is required was emailed to the PIC email. A new thermometer will be purchased. 4-302.14; Priority Foundation; Facility could not find their quaternary ammonium test strips. Provide a test kit that accurately measures sanitizer concentrations. Purchase new test strips.

3-304.14(B) Wiping cloth is stored in barely detectable sanitizer. New sanitizer was obtained and was very weak. Dispenser at the sink has an air gap in the hose and is not providing adequate sanitizer. Manager switched the jug of concentrate to a new jug and sanitizer is dispensing properly. Hold in-use wiping cloths in properly concentrated sanitizer between uses. Use test strips to verify presence of sanitizer.
