3-501.15; Priority Foundation; Tomatoes to be cooled after slicing were stored in a deep container with a tight lid. Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. Leave food uncovered if it can be protected from contamination. CDI-Plastic wrap was removed. Tomatoes were moved to the walk in cooler to finish cooling; and cooled 4 degrees in 20 minutes. .
