Certified Food Protection Manager
2-102.12 (A) Certified Food Protection Manager ; Core; Person in charge is not a certified food protection manager. the designated person in charge shall be a certified food protection manager by showing efficiency by passing a test that is part of an ANSI accredited program. Obtain ServSafe or other approved food protection manager certifications. Other managers have it in the facility; just not working during time of inspection. When food is being prepared; served or sold a manager shall be onsite. Information provided for upcoming Servsafe classes.
A required permit, food safety certificate, trained manager, or posted sign was missing or not current. These show the business is following the rules and has trained staff.

Provide an approved Max/Min thermometer for testing sanitizing temperatures in hot water warewashing machines. The thermometer must be readily accessible. Verification required. Have other managers send photo to inspector.

Non-food contact surfaces clean
4-601.11(B) and (C); Core; Fan covers inside reach-in units near espresso machines have dust accumulation. Milk residue observed on the shelving and on bottom of tall reach-in units. The nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust; dirt; food residue; and other debris. Increase cleaning frequency of these items. Cleaning in all other areas is very well done. Full point not taken.
