After conversation with the PIC it was determined that the pizza was put out around 8:30am (1 hr 20 mins prior to my arrival). Maintain TCS foods in cold holding at 41F or less. CDI- education given. TPHC (Time as a Public Health Control) was suggested to the PIC; as well as the option to put out 1 slice of pizza as a display ONLY and keep the rest refrigerated until ordered. The PIC opted to use the display option. The pepperoni pizza not used for the display was placed in the walk-in to cool to 41F.
