3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P); Cut lettuce was holding at 46F in a prep top cooler and tuna was at 44F in a prep bottom cooler. Potentially hazardous food being held cold shall remain at 41F or below. CDI- Food was taken to walk in cooler to cool down.

7-201.11 Separation - Storage (P); Bottles of butane were stored with a food scale and food grade paper on shelving. Poisonous or toxic materials shall be stored in an area where they cannot contaminate food or clean equipment. CDI- Items were seperated as needed.

6-501.111 Controlling Pests; A few live flies were observed in the kitchen area. The premises shall be maintained free of insects and other pests. EHS recommends increased pest control for warmer months.

3-304.14 Wiping Cloths; Use Limitations (C); Sanitizer bucket holding wiping cloths was at a lower concentration than necessary according to test strip color chart. Between uses; wet or moist wiping cloths shall be stored in an approved sanitizer at an appropriate concentration.
