Warewashing facilities: installed; maintained & used; test strips
4-302.14;Priority Foundation; No sanitizer test strips available at time of inspection. Provide a test kit that accurately measures sanitizer concentrations. Facility uses bleach solution in three compartment sink; ensure chlorine test strips are readily available to mix sanitizer at correct concentration. Chlorine shall be 50-200ppm. No solution in sink at time of inspection; bleach in locked storage room. Please send photo of test strips once obtained.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

2-102.12 (A);Core; Certified Food Protection Manager; Facility is in the process of hiring a new kitchen manager; and nobody onsite had food safety management certificate. The designated person in charge shall be a certified food protection manager; who has shown proficiency of required information through passing a test that is part of an accredited program. Information on upcoming ServSafe classes sent during inspection.
