Chicken salad (47F); roast beef slices (46F); and roasted red peppers (43F) in top portion of front prep cooler holding above 41F. PIC stated that the flip top lids are kept open during rush. Maintain TCS foods in cold holding at 41F or less. CDI- Buttermilk was discarded and replenished in ice bath and ice was added to the level of the food. Foods were decreasing in temperature in main prep cooler and front prep cooler. Front prep cooler was adjusted to a lower setting.
